Ingredients

  • 1 large egg

  • 1/2 small apple, grated (75 g)

  • 2 tablespoond avocado oil

  • 3 tablespoons almond flour (21 g)

  • 1/2 tablespoon coconut flour (3.5 g)

  • 1/2 teaspoon baking powder

  • 1 teaspoon cinnamon (3 g)

  • OPTIONAL: Pinch of salt

  • OPTIONAL: sweetener of your choice (stevia, erythritol, monk fruit) to taste

  • Non-stick cooking spray or extra coconut oil for greasing the waffle iron.

Directions

  • Preheat Your Waffle Iron: Turn on your waffle iron and let it heat up while you prepare the batter.
  • Prepare the Batter: In a mixing bowl, whisk together the almond flour, eggs, grated apple, melted coconut oil, baking powder, cinnamon, salt, and sweetener if using. Mix until smooth and well combined.
  • Grease the Waffle Iron: Lightly grease the waffle iron with non-stick cooking spray or brush it with melted coconut oil to prevent sticking. Repeat as needed between waffles to prevent the batter from sticking.
  • Cook the Waffles: Pour enough batter onto the waffle iron to cover the waffle grids, then close the lid and cook according to the manufacturer’s instructions until the waffles are golden brown and crispy. Mine took around 2 minutes to cook in the round-shaped small waffle maker. Look out for the moment when the waffle maker stops releasing steam. This means the waffles are ready.
  • Serve: Once cooked, carefully remove the waffles from the waffle iron and serve warm. You can top them with sugar-free syrup, fresh berries, whipped cream, or any other toppings of your choice.
  • Enjoy your delicious low-carb apple waffles! They’re perfect for a healthy breakfast or brunch option.
