What’s not to love about these little bite-size 90% dark chocolate Keto Crispy Dark Chocolate Candy Bites? They’re just something to snack on that won’t impact ketosis or your blood sugar. This easy-to-make healthy Crispy Dark Chocolate Candy Bites recipe is low-carb, gluten-free, grain-free, dairy-free, sugar-free, and Keto and Paleo-friendly. Dark chocolate is balanced with hazelnut butter and quinoa puffs for a perfect crispy texture, making it a Keto-friendly treat. It provides a melt-in-your-mouth experience for your taste buds. And the best part – you can put them together in about 5 minutes for minimal cost.

INGREDIENTS NEEDED

These low-carb keto energy balls need just 3 ingredients. No almond flour or coconut flour, no protein powder, or other expensive ingredients are needed! Just hazelnut butter, quinoa puffs, and dark chocolate.

No Sugar Added Hazelnut Butter – You can use any butter you like almond, peanut, or cashews. I buy mine at the Bulk Barn.

Quinoa Puffs – Gives these a nice texture and cuts the calories. I buy my inexpensive in Bulk Barn. You can use crispy brown rice cereal.

Dark Chocolate – Lindt is 90% dark chocolate. This recipe calls for a 6 squares or 6-ounce bag of sugar-free chocolate chips, such as Lily’s Chocolate Chips. If you’d like to completely cover the healthy crispy bites in chocolate. I know good sugar-free chocolate is not cheap so alternatively you could roll these in cocoa powder and just do a drizzle of chocolate.

Powdered Sugar-Free Sweetener – I don’t use it as balls are sweet on their own. You can add the powdered keto-friendly sweetener of your choice. If you don’t have a powdered sweetener you can grind granulated erythritol or xylitol in a food processor or blender. Erythritol is my preferred low-carb sweetener. Be aware that not all low-carb sweeteners can be substituted 1:1 for erythritol. Directions

  • Line a cookie sheet with parchment paper. In a large measuring cup or medium bowl place hazelnut butter and 1 tablespoon sweetener if using, and mix until smooth with a spoon. Add in quinoa puffs and stir together until well combined.
  • Form into balls. I normally scoop them with a small 1-tablespoon cookie scoop so they are the same size and then roll them in my hands to make a more uniform sphere shape, then place them on the cookie sheet. Repeat with the rest of the mixture, then place in the freezer for 30 minutes to 1 hour, until firm. This amount of batter makes 9 balls 18 grams each.
  • Melt Lindt 90% dark chocolate 6 squares in the microwave in a medium heat-proof bowl stirring every 20 seconds, until melted, approximately 45-60 seconds.
  • Coat in melted chocolate. Remove the balls from the freezer and coat each ball in chocolate (use 2 forks to do this!) place back in the freezer to set. Or if you want to use less chocolate drizzle with melted chocolate. Return them to the freezer to allow the chocolate to harden.
  • Store in an airtight container in the freezer, letting sit at room temperature for a minute or two before eating.
