This low-carb tiramisu for one is easy to make, delicious, creamy, rich, and tastes almost like the original but with fewer carbs. This low-carb tiramisu is made with a flourless cake layer instead of ladyfingers, brushed with coffee, and topped with an incredibly creamy sugar-free mascarpone cheese.

Ingredients

  • COFFEE-SOAKED BISCUIT BASE
  • 1 Large Egg

  • 20 gr Butter or Coconut oil

  • 2 tablespoons Coconut milk (20ml)

  • 4 tablespoons Unsweetened Cacao powder

  • 2 tablespoons Erythritol granulated sweetener

  • 1/2 teaspoons Baking powder

  • 1 shot Espresso

  • COFFEE MASCARPONE CREAM
  • 1/2 cup Mascarpone cheese (110gr)

  • 1 shot Espresso

  • 1 tablespoon Erythritol powder sweetener

  • DECORATIONS
  • Unsweetened cocoa powder

  • Few raspberries

Directions

  • Combine in 3-inch ramekin; egg, melted butter, milk, and a sweetener and mix it well.
  • In a different dish combine unsweetened cocoa powder and baking powder. Mix it until well combined and you cannot see any clamps of cocoa.
  • Add cocoa mix to wet ingredients and mix again.
  • Place the ramekin into the microwave and cook it for 1.5 minutes. It should be still moist in the center
  • Make one shot of espresso or use instant coffee and soak the sponge with it.
  • Set aside and make the cream.
  • COFFEE MASCARPONE CREAM
  • To make mascarpone cream with coffee, first make one shot of espresso coffee and let it cool.
  • Dissolve the sweetener of your choice in coffee.
  • Combine in a bowl of mascarpone and cold coffee with sweetener in it. Mix all the ingredients for 4-5 minutes or until you have a smooth and soft cream.
  • Now your delicious cream is ready.
  • Spread it over the chocolate cake and sprinkle unsweetened chocolate powder.
  • Cover it with plastic wrap (cling film) and leave in the refrigerator for 2 hours or overnight.
  • SERVING
  • When it’s time to serve this delicious dessert, gently remove the plastic. Decorate with raspberries if you want and enjoy it with tea or coffee.
