Ingredients

  • 1 cup Dry beans

  • 4 large Egg whites

  • 1/2 tablespoon Baking powder

  • 2 tablespoons Italian seasoning

  • 2 tablespoons Psyllium powder

  • 1/4 teaspoon Salt to taste

  • Yeast Proof
  • 1 packet Fast-ricing yeast packet

  • 1 teaspoon Inulin powder or sugar

  • 1/2 cup Warm water

Directions

  • Start by soaking 1 cup of washed white beans overnight or at least 4 hours.
  • In a small bowl, proof the yeast with ½ cup of warm water and a teaspoon of sugar or inulin powder.
  • Cover and set aside until bubbly, 5-7 minutes.  If the mixture doesn’t bubble, then the yeast is dead and you need to start again with fresh yeast.
  • Then blend soaked white beans, psyllium husk powder, baking powder, salt, Italian seasoning, and 4 egg whites. Add the yeast that has been proofed and combine the ingredients well.
  • Next, spread the dough evenly over the prepared baking sheet. I recommend using wet hands to smooth out the bread to approximately 9 x 9 inches on the parchment paper.
  • Cover the pan with a cloth towel and set it aside to rise for 60-90 minutes until the dough reaches the sides of the pan. Preheat oven to 400 F.
  • Bake until the top is medium brown 30-35 minutes. Cool in the pan for 5 minutes and then remove from the pan and cool on a rack for 30 minutes before cutting. 
  • With a pastry brush, spread two tablespoons of olive oil evenly over the surface of the focaccia bread.
  • Press the olives evenly onto the surface of the bread.
  • Wet your fingers with water and give the bread the dimpled, classic texture by gently pressing your fingers over the entire surface of the bread.
  • Store any leftovers in the refrigerator in an airtight container for up to five days or freeze for up to three weeks.

I decided to top my focaccia bread with green olives but frankly, the sky’s the limit when it comes to customizing.

You can change the flavor of your focaccia bread by adding different herbs and freshly minced garlic.

The following are some ingredients to consider using for flavor or decorations:

  • Chives and green onions: These add a little onion flavor and can be used as flower stems
  • Parsley and cilantro add to the flavor profile and can be used as leaves.
  • Basil: As larger leaves
  • Red onions and shallots, sliced thinly, can be used to create flowers.
  • Green onions and chives are used as stems.
  • Cherry tomatoes, sliced in half for flower centers
  • Freshly grated parmesan cheese for flavor
