Ingredients

  • 3 large eggs

  • 1/8 teaspoon salt

  • 1 orange (184 gr, 3” in diameter)

  • 1/4 cup coconut flour (30 gr)

  • 1/2 cup walnuts (50 gr) (optional, for added crunch)

  • 1/2 cup carob powder (70 gr)

  • 1 teaspoon baking powder

  • 1 teaspoon  cinnamon

  • 1/2 teaspoon ginger powder

  • 2 tablespoons almond slices (100 gr)

Directions

  • Preheat oven: Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  • Mix dry ingredients: In a mixing bowl, whisk together coconut flour, carob powder, cinnamon, ginger, salt, and baking powder until well combined.
  • Combine wet ingredients: In a blender grind one orange with skin (without seeds). Add and mix 3 eggs until smooth.
  • Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  • Fold in nuts (optional): If using chopped walnuts, fold them into the batter until evenly distributed.
  • Transfer to baking pan: Pour the batter into the prepared baking pan and spread it evenly with a spatula. Sprinkle with almond slices.
  • Bake: Place the pan in the preheated oven and bake for 30-35 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.
  • Cool and slice: Allow the brownies to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely. Once cooled, slice into squares and serve.
