Ingredients

  • FOR SALAD:
  • 1 can Tuna in spring water (120 g)

  • 3 cups chopped cabbage

  • 3 small cucumbers

  • 8 spring onions (green parts)

  • 3 tablespoons chopped dill

  • 3 large boiled eggs

  • FOR SALAD DRESSING:
  • 2 tablespoons virgin olive oil

  • 2 tablespoons apple cider vinegar or lemon juice

  • 1 tablespoon Dijon mustard

Directions

  • Shred the cabbage. You can use a mandolin slicer or a food processor using the slicing attachment. Slice the 3 cucumbers, 3 eggs, spring onions (green onions) and dill.
  • Drain the water from the tuna and flake with a fork, leaving some chunks. 
  • In a large mixing bowl combine all ingredients.
  • In a small bowl or jar, combine the olive oil, apple vinegar, and Dijon mustard. Whisk until smooth and creamy.
  • Pour the dressing over the salad. Toss until everything is covered in the dressing. Divide into bowls and sprinkle with dill if desired Serve and enjoy!

Notes

  • This salad is best eaten immediately for maximum crunch. If using for lunch meal prep, store leftovers in an airtight container in the fridge for up to 3-4 days.
