Ingredients

  • 1 1/2 pounds Extra-lean ground beef (700 g, 80% lean)

  • 3 1/2 cups cabbage Napa cabbage (1 ½ cup minced, 2 cups chopped), divided.

  • 7 scalions white parts minced, green parts sliced thin on a bias, divided.

  • 2 tablespoons coconut oil

  • 3 cloves garlic minced

  • 2 tablespoons grated fresh ginger

  • 4 cups water with beef bullion

  • 2 tablespoons toasted sesame oil, divided.

Directions

  • Add salt and pepper to taste to ground beef.
  • Mince 3 scallions, only white parts, and add to ground beef.
  • Mince napa cabbage tops into small pieces roughly 1 1/2 cups and add it to ground beef.
  • Gently knead ground beef with your hands until combined. Pinch off and roll the meat mixture into 1 3/4-inch balls (you should have about 30 balls).
  • Heat coconut oil in a Dutch oven over medium heat until simmering. Add remaining scallion whites, garlic, and ginger and cook until fragrant, about 1 minute.
  • Stir in 2 cups chopped Napa cabbage and cook until softened about 2 minutes.
  • Stir in 4 cups of water with a beef bouillon cube, then gently add meatballs and bring to a simmer. Reduce heat to low, cover, and cook until meatballs and cooked through, 4 to 6 minutes, gently stirring to redistribute meatballs halfway through cooking.
  • Drizzle each portion with 1/2 teaspoon sesame oil and sprinkle with remaining scallion greens before serving.
