CUSTARD CREAM
– 1 cup milk (I used coconut milk) 225 ml
– 2 large egg yolks
– 1/3 cup Erythritol sweetener 65 gr
– 3 tablespoons Xanthan gum or Arrowroot flour/starch
– 2 tablespoons of hazelnut butter
– 1 tablespoon cacao powder
CAKE SPONGE
– 4 large eggs
– 125gr Cream cheese
– 3 tablespoons Erythritol powder
– 1 teaspoon baking powder
TOPPING
– 6 squares of 90% dark Lindt chocolate 60gr
– Cacao butter 15 gr (optional)
– 15 roasted whole hazelnuts

Custard cream step 1:

Add 1 cup of coconut milk into a medium saucepan and bring it to a boil over medium heat. Immediately turn off the heat and set milk aside.
Custard cream step 2:

In a bowl, whisk the 2 egg yolks, 1/3 cup of Erythritol sweetener, 3 tablespoons of Xanthan gum, and 1 tablespoon of cacao powder and whisk vigorously until no lumps remain.
Custard cream step 3:

Whisk in 3 tablespoons of hot milk into the egg yolk mixture one by one until incorporated to warm up the mixture (VERY IMPORTANT). Whisk in the remaining hot milk mixture. Put the bowl with custard cream on top of the saucepan with boiling water. Cook over medium-high heat, whisking constantly, until thickened and slowly boiling.
Custard cream step 4:

Remove from the heat, cool down, and stir in 2 tablespoons of unsweetened hazelnut butter (homemade or store-bought).

Cover with plastic wrap, lightly pressing the plastic against the surface to prevent skin from forming. Chill at least 2 hours.
Sponge Batter Step 1:

Heat up the oven to 180C/360F so the low-carb Ferrero Rocher roll pastry batter goes into an already preheated oven. Separate 4 large eggs, put egg whites in a large bowl and egg yolks into a medium bowl. In a bowl with 4 egg yolks add 1/2 pack (125gr) of original cream cheese, 1 teaspoon of baking powder, and 3 tablespoons of Erythritol sweetener.
Sponge Batter Step 2:

In a large bowl mix 4 egg whites with a pinch of salt until soft picks will form.
Sponge Batter Step 3:

Combine slowly and gently combine egg whites and egg yolk mixtures together.
Sponge Batter Step 4:

Pour the batter onto a parchment paper-lined baking sheet (17in x 7 in) and spread it evenly.

Bake until the cake is set, and a toothpick comes out clean 10-15 minutes. Roll it while warm into a roll. Use parchment paper to help you.

Once the cake is cooled, spread the chocolate hazelnut custard cream.
Roast the Hazelnuts:

Spread hazelnuts on a baking tray and transfer to a still-hot oven at 180C/375F. Bake for about 8-10 minutes, until light browned. Remove them from the oven and transfer them on a clean towel while hot. Rub the hazelnuts together in the towel to remove the skins.
Chocolate Coating Step 1:

Chop hazelnuts.

Melt 90% dark Lindt chocolate in a bain-marie/double boiler. Once melted add cacao butter and 2 tablespoons of chopped hazelnuts.
Garnish pastries

Cut the cooled roll with custard cream inside into 5 equal parts. Dip each part into melted chocolate, put it on the metal rack to cool, and decorate with roasted whole hazelnuts.
Notes:
- The better the chocolate, the better the outcome. Just know that baking chocolate will not work in this recipe. Use your favorite low-carb chocolate, just remember to check the carb counts and do your own math because not all sugar-free chocolate is created equally.
- Low-carb sweetener – Erythritol is my preferred low-carb sweetener; you can substitute your favorite low-carb sweetener. You can use your favorite low-carb sweetener. Be aware that not all low-carb sweeteners can be substituted 1:1 for erythritol.
