Ingredients

  • 4 Eggs

  • Pinch Salt

  • 1/4 cup Psyllium husk (40g)

  • 1/2 teaspoon Backing soda (3g)

  • 1/8 cup Boiling water (40ml / 8 teaspoons)

Directions

  • Preheat the oven to 420°F/220°C.
  • In a small bowl, whisk together the psyllium husk and baking soda.
  • In a medium or large bowl whisk together 4 eggs (any temperature) with a pinch of salt.
  • Mix until egg whites and egg yolk are well combined.
  • Add psyllium husk & backing soda mixture and mix well.
  • Add 40 ml boiling water and mix again.
  • Set mixture aside for 15 minutes. Don’t skip this step.
  • Line the baking sheet with parchment paper.
  • Prepare a bowl with water to dip your hands.
  • After 15-20 minutes divide dough into 4 or 6 equal parts. Dip your hand into the water and scoop one part of the dough. With very light pressure, turn the dough in your hand to shape it into a 2-inch domed round.
  • Transfer the round to a nonstick baking sheet or a baking sheet lined with parchment paper.
  • If desired you can sprinkle buns with everything seasoning, sesame, or other seeds (optional).  
  • Adjust the oven rack to a middle position and bake the buns for about 25 minutes in a 420F / 220C oven or until it is no longer doughy in the center.
  • Please remove it from the oven and set it aside to cool before slicing and serving.

Notes

  • To freeze the bread, wrap it securely in plastic wrap then place it in a sealable plastic bag. Remove as much air as possible and seal the bag shut. Freeze the bread for up to 2 weeks.
  • Soda buns are perfect for sandwiches, grilled cheese, homemade croutons, or as a side for soup.

You can not substitute psyllium husk with psyllium powder. If you have only psyllium powder then use 1/2 the amount. (20gr)

You have to bake the buns until they have a hard crust on top. Don’t be afraid to bake them a bit longer. You will not dry them out.

Wet hands with water, it will help keep the dough from sticking to your hands.

Some brands of psyllium husk turn purple, whether you buy whole husks or powdered husks. There’s nothing you can do about the purple color, but the taste and texture are the same, so don’t worry!

I buy psyllium husk at the Balk Burn. Many recipe creators recommend using NOW psyllium husk powder.

The safe answer is “up to a week.” Because these are homemade buns, there are no preservatives.

If you do want to freeze the buns, let them cool completely then wrap them very securely in plastic wrap. Pop buns into a sealable plastic bag then squeeze out as much air as possible before sealing the bag shut and stashing it in the freezer.

If you decide to freeze them, simply thaw the buns on the counter for about 3 hours or 4-5 hours in the fridge until soft and ready to use.
