Blanched Garlic: To Avoid Getting Gassy and Bloating From Garlic

Every time I eat a meal with a large amount of garlic, I get gassy and bloated right away. 

Garlic is high in a carb called fructans. The problem with fructans is that they reach your intestines intact. This leads the bacteria in your gut to ferment it, which causes an increase in gas. 
Most people can have a small number of fructans without getting any symptoms. However, for people with IBS specifically, or sensitivity to fructans, a small dosage (consuming one or two cloves of garlic) can be enough to cause bloating and gas. “ – source

To avoid getting gassy and bloated from garlic, cook it. I prefer blanching garlic, but you can also roast it in olive oil. Olive oil helps you to digest garlic.

For some people, the problem arises when consuming raw garlic. When you blanch or roast the garlic, some of the molecules in garlic start breaking down, making it easier on your stomach. 

Also, blanching garlic in water prevents oxidation (and therefore harshness). Keeping garlic in olive oil prevents oxidation and helps your digestion. As a bonus, you will be left with garlic-flavored olive oil that can be used for basting, vinaigrettes, and other FODMAP recipes.

Ingredients

  • 1 glove Garlic

  • 3 tablespoons Olive oil

Directions

  • Separate the cloves from 1 head of garlic and remove the skin.
  • Put garlic in a small saucepan filled with cold water, bring it to a boil, and drain.
  • Repeat, then set garlic aside and let it cool.
  • Store in an airtight container filled with olive oil in the refrigerator for up to 1 week.
  • Use this blanched garlic in your cooking.
